Drought is changing what grows in the fields of Alsace. Four farmers have turned to lentils, chickpeas, quinoa and other crops that need less water and fewer pesticides, creating their own local brand, Graines d’Alsace. Their small cooperative now produces more than 100 tonnes a year - twice as much as three years ago - supplying hospitals, canteens and local shops. As Europe gets hotter and drier, the humble chickpea may be becoming a surprisingly smart crop.
